Every year my husband grows tomatoes for us. They are so good! Our summers are filled with lots of caprese salads and tomato/avocado/onion salads. In the fall I like to make fried green tomatoes at least once (recipe below).
Fried Green Tomatoes
- green tomatoes
- canola oil (add bacon fat if you have some on hand)
- eggs (start with 3)
- 2 cups flour
- 1 cup cornmeal
- 2 tsp. Penzey's Black and Red Spice (Cayenne and black pepper mix. Adjust to desired spice level. 2 tsp. makes it moderately spicy.)
- Maldon sea salt
Cut tomatoes into 1/4" slices. Dry each slice with a paper towel. Beat eggs in a small bowl. Mix flour, cornmeal and pepper blend in a medium sized bowl. Coat each tomato slice with egg, then flour mixture, then egg, then flour mixture again. Fry slices in a pan with 1" hot oil until golden. Dry slices on racks with paper towels and sprinkle both sides with Maldon sea salt.
This is lazy weekend food. Fried greens + beer + epsom salt ginger detox bath = food coma x 10.
This is also very messy, but worth it. I might consider using Trongs for battering them up this year.
